Aloo Bhindi/Potato Lady's finger Curry (Contributed by Sowmya)
Ingredients:
For gravy (grinding)
1) Onion - 1 Large
2) Tomato - 2 Medium
3) Ginger - 1 inch piece
4) Garlic - 1 inch piece
Instead of 3 & 4 1 Spoon Ginger Garlic paste also can be used.
5) Green Chilli - 1 (Increase as per the spice you require)
Main
Lady's finger - 100 gms cut in 1 inch blocks
Potato - 2 cut into pieces
Dry Ingredients
1) Cumin Seeds - 1 Spoon
2) Turmeric Powder - 1 tsp
3) Chilli Powder - 1 tsp
4) Coriander Powder - tsp
5) Cumin Powder - 1 tsp
6) Salt - As per taste.
Method:
Grind all ingredients under For gravy (grinding) and keep aside.
In a non-stick pan or any kadai take 2 spoons of oil and put the lady's finger in it. Stir till it starts browning and the stickiness is gone. Remove in a plate. Then add another 2 spoons of oil and put the cut potatoes in it and stir even by putting a lid for about 6-8 mins till when you try piercing the potato and you know its cooked. Remove in a plate.
Now add one spoon of oil into the same pan. Add the Cumin seeds, once it splatters add the ground masala that you had kept aside and stir till oil leaves the sides. Now add all other dry ingredients and stir for about 3 mins. Now add little water about half to one cup to make it gravy consistency. After it comes to boil add the vegetables. Stir till the oil leaves side. You can add cilantro (kothamalli) after switching off gas.
Tips:
1) All cooking in medium flame only for maximum benefit.
2) I use non - stick pan because it uses less oil.
3) Whole ginger and garlic is better than ginger garlic paste.
