Sabudana khichdi

This is normally considered to be "fast" food which means what people eat when they have vrath. These vrath normally prevent them to eat anything made of rice and hence this is an alternative. Sabudana comes from tapioca root which is then extracted and processed into this ball kind of format. Apart from being a vrath item this khichdi is great as breakfast. It is high in nutrition and is gluten free too.

Ingredients:

1) Sabudana - 1 1/2 cups
2) Groundnuts - 1/2 cup Dry roasted , peeled and ground with 2 dry red chillies
3) Red Chillies - 2 (For the 2nd Ingredient)
4) Green Peas - 1/2 Cup (Keep it in microwave for few mins so that its slightly cooked)
5) Potato - 1 or 2 cut into very small pieces.
6) Green chillies - 2 slit long ways (exclude if its for kids)
7) Jeera/Cumin Seeds - 1/2 tsp
8) Turmeric Powder - 1/4 tsp
9) Salt - 1 tsp or as per your taste
10) Lemon Juice - 1 table spoon
11) Cilantro/kothamalli - 2 table spoons chopped nicely for garnish

Method:

Gently wash and soak sabudana in about 1/2 cup of water for 6 to 8 hours or 2-3 hrs in hot water.
Heat the oil in a frying pan on medium heat. Add cumin seeds and after seeds crack add green chilies and stir for a few seconds.Next add the green peas and potato pieces and stir fry until they are tender.
Add the soaked sabudana and stir fry for 3 to 4 minutes.
Add turmeric, and salt and stir fry on medium heat continuously until sabudana becomes translucent,
Stir gently and making sure sabudana doesn’t get sticky and stick to each other. This should take about 6 to 7 minutes. Add peanut powder and mix well so that the sabudana gets coated with the powder. Add lemon juice and cilantro (hara dhania)and give it a good mix.

Yummy khichdi is ready. Kids would love this because of the tangy and different flavour of peanuts in it.
