Kulfi



I dont like eating icecreams but like kulfi. My daughter likes both and these days instead of storemade I prefer making stuff for her so that I know what goes into it and hence this attempt. Also this was my contribution to a family potluck on diwali.

(By the way my food photography is horrible please dont mind)

Ingredients

1) Milk - 4 Cups
2) Cream - 3/4th cup
3) Sugar - 3/4th cup (Increase if you like it more sweet)
4) Agar Agar - 2 spoons(Non-veg alternative is Gelatin)
5) Cornflour - 2 Tblsp
6) Cardomom Powder - 1 tsp
7) Vanilla Essence - 1 tsp

Method:

Boil the milk with cream and sugar. When it starts boiling reduce heat and keep stirring for about half an hour. Mix agar agar and cornflour in water(If agar agar grass or gelatin then mix in hot water and let it dissolve completely). Add this mixture into the milk after the half hour. Now stir for some more time. Then add cardomom powder and mix for another 2-3 mins.
Switch off flame and add Vanilla essence. Let the milk cool and keep it in fridge for atleast for 5 hrs before serving.

Note: You can use various variations to this recipe. 1) Add saffron. 2) Minus Cardomom Powder or Vanilla. 3) Add Pistachios 4) Add chocolate etc etc
